When chefs cook at home, most people think it’s super fancy restaurant food. Now I like to hold a few dinner parties; however, I’m always looking for something lighter and quicker. We eat this style of wrap reasonably often. I made my wholewheat tortillas but feel free to skip it and buy them. Super quick and filled with veggies.

Serves: 4

Difficulty: Easy

Cook Time: 1 hr but marinate overnight for best results

Ingredients

  • 4 chicken breasts or thighs

  • 2 tbsp yoghurt

  • Pinch salt

  • 1 tsp cumin

  • 1 tsp coriander powder

  • 1/2 tsp chilli powder

  • 1/2 tsp fennel seeds (optional)

  • 1/2 lemon, juice

  • 270g wholewheat strong flour

  • pinch salt

  • 2 tbsp oil

  • 150ml water

  • 1 head romaine lettuce

  • 2 tomatoes sliced

  • 2 red onion sliced

  • Squeeze of your favourite mayo (I love Japanese mayo p.251 TK:A)

  • Squeeze of your favourite hot sauce (Funky Chilli Sauce p.248 or Sriracha Hot Honey p.249)

Method

  1. Mix the yoghurt, with all the seasoning and spices and leave over night but for at least 4 hours.

  2. Mix flour with salt and oil and add in water until it forms a dough. Knead for 5 mins before resting for 10 mins.

  3. Preheat an oven to 180c fan / 200c / gas mark 4, add the chicken to a lined oven tray and roast for 15-20 mins or until fully cooked. Then slice to serve.

  4. Divide the dough into 8 pieces. Using more flour roll out to approx 20cm. Heat a heavy-based frying pan, and cook each flatbread for 2 mins on each side and store in a tea towel.

  5. Build the wrap with lettuce, tomatoes, onion, mayo, chilli sauce and the chicken.
